Have a recipe with a delicate sauce? Making candy? Need a double broiler? Here is how I save money by not buying a double broiler. I prefer to spend money on things that I will use quite a bit and make do without for things that I will not use much. I also can’t stand the clutter of things that don’t get used. So here is how I was taught as a child to make your own double broiler. I have been doing this for many years.
Place a smaller pan inside one that is a bit larger, filled with water. This method keeps the sauce, candy or whatever you are melting, from getting “burnt” or just too hot. As the water in the lower pot gets hot and comes to a low boil, the heat transfers to the upper pot. Just make sure that you don’t have too much water in the lower pot that it boils into the upper pot. You also want to make sure that when you are stirring the upper pot that you don,t allow water to come in as you increase pressure. The key is to not overfill or under fill the lower pot.
