I thought you might enjoy the recipe for my Chocolate Zucchini Bread. I am not sure of it’s source as it came from a very dear friend of mine.
I shred my zucchini with my Presto Salad Shooter. I am absolutely in love with this thing. The dear friend that gave me this recipe is also the one who is responsible for me getting this great kitchen tool. I would visit her and she would use this thing for scalloped potatoes and shredding her zucchini. It sure makes life easier.
Chocolate Zucchini Bread (PDF Printable Chocolate Zucchini Bread)
1 Cup vegetable Oil
2 Cups Sugar
1 Tbsp Vanilla
2 Cups Shredded, Peeled Zucchini (about 1 medium)
2 1/2 Cups Flour
1/2 Cup Cocoa
1 tsp Salt
1 tsp Baking Soda
1 tsp Ground Cinnamon
1/4 tsp Baking Powder
Beat eggs, oil, sugar and vanilla in bowl. Stir in zucchini.
In another bowl, combine the dry ingredients. Add the dry ingredients to the zucchini mixture and stir well. Pour into 2 greased 8x4x2 pans. I use my bread pans. Bake at 350 for 1 hour or until toothpick comes out clean.
