Weekly Menu Plan: That Again?

Now that we are in the middle of evening activities, I repeat meals more often and I cook dinner for lunch.  By cooking dinner for lunch, we can take sandwiches, cheese, crackers and fruit on the run for our dinners.  This meal swapping is a really big help with planning and saving money.  When Mr PF and my oldest come home, they can warm up their supper.

For breakfast options this week we have; oatmeal, toast, muffins, cheerios and fruit.

Our lunch options include; sandwiches, cheese and crackers, fruit, and leftovers.

Our snack options this week include; No Bake Energy Balls, Chocolate Granola Bars, Chocolate Chip Banana Muffins, Chocolate Zucchini Bread, fruit and almonds.  I am working hard to keep more healthy and homemade snacks around the house as opposed to the packaged processed stuff.  Most of the time the homemade option is better for you and it is definitely better for the grocery budget.  In each of the recipes linked above and the Chocolate Zucchini Bread (recipe to come later), I add a tablespoon of Flax Seed.  I have been wanting to start using flax seed for the Omega-3 benefits.


Our dinners this week will be:

Sunday – Cheesy Chicken and Rice Bake

Monday – Camping Casserole, biscuits

Tuesday – Enchiladas, Rice and Corn

Wednesday – leftovers

Thursday – Perfect Pot Roast

Friday – Spaghetti Casserole, Salad and Bread (yep again ….. my crew loves this meal)

Saturday – No meal planned yet.  I’m waiting to see everyone’s schedule
